Are you looking for pancakes that both children and adults like - and that also contain some extra nutrition? Then this recipe is for you! A classic pancake batter with a twist: fresh parsley adds great flavour and a hint of green colour. Perfect for lunch, dinner or a snack.
📝 Ingredients (about 4 servings)
- 2.5 dl wheat flour
- 0.5 dl graham flour
- 0.5 tsp salt
- 6 dl milk
- 2 eggs
- 1 tbsp chopped fresh parsley (optional)
- 1 small carrot, finely grated (optional)
- 1-2 tbsp liquid butter or oil (optional)
- 1 tsp sugar (optional)
👩🍳 How to do it
- Mix the wheat flour, graham flour and salt in a bowl.
- Whisk half of the milk into a smooth batter.
- Add the rest of the milk, eggs and any sugar.
- Stir in the parsley, carrot if using, and melted butter.
- Leave the batter to rest for 10-15 minutes - this makes the pancakes a little extra fine.
- Fry thin pancakes in a little butter or oil over medium heat until golden brown.
💡 Tips!
- In fact, I usually skip the carrot and just add a bit of parsley - it gives a mild, good flavour and a nice contrast. The pancakes will be more like "regular" pancakes in flavour, but with a little extra twist. Carrot can make them a little more "health-conscious"if you know what I mean - so it's all a matter of taste!
- Do you want them without sugar? It's just as well - I usually go completely without, and they turn out delicious anyway.
- The pancakes can be frozen and reheated in the oven or microwave.
- Serve with cottage cheese, jam, fresh fruit or a dollop of crème fraîche.
