3 cute Easter recipes for the whole family

1. lemon muffins

Here's what you need (12 muffins):

For the muffins:

  • 2 eggs
  • 2 dl sugar
  • 3 dl wheat flour
  • 150 g butter
  • 1 tsp baking powder
  • 1 tsp vanilla sugar
  • 0.75 dl milk
  • 0.25 dl lemon juice
  • 1 lemon
  • 1 pinch of salt

For the frosting: 

  • 100 g white chocolate
  • 185 g cream cheese
  • 3 dl icing sugar
  • 150 g room temperature butter

For the garnish:
sprinkles

Here's how you do it:

Start by setting the oven to 200 degrees. Whisk the butter and sugar. Add the eggs, stirring, then the milk and lemon juice. Mix the dry ingredients separately and then sift them into the batter. Add the grated lemon zest and divide the batter into 12 muffin tins. Bake for 11-13 minutes. Melt the white chocolate and mix with the butter. Stir in the cream cheese and icing sugar and mix evenly. When the cupcakes are ready and have cooled, spread the frosting and finish with sprinkles.

Here's what you need (12 muffins):

For the muffins:

  • 2 eggs
  • 2 dl sugar
  • 3 dl wheat flour
  • 100 g butter
  • 1 dl milk
  • 2 tsp baking powder
  • 2 tsp vanilla sugar

For the garnish:
White, green and pink sugarpaste

Here's how you do it:

Start by setting the oven to 200 degrees. Melt the butter and set it aside. Whisk the eggs and sugar. Mix the dry ingredients separately and stir into the batter. Add the milk and butter to the mixture. Divide the mixture into muffin tins and bake for 15 minutes. Roll out the green sugarpaste and cut out round shapes equal to the surface of the muffins, which should represent grass. Then roll out the white sugarpaste to cut out bunny ears. Do the same with the pink sugarpaste but in a smaller size. Place the pink pieces on top of the white ones to make it look like bunny ears. When the cupcakes are ready and have cooled, first lay the lawn and then press down the bunny ears standing up, so that it looks like the bunny is sticking its ears out of the rabbit hole.

3. coconut muffins

Here's what you need (30 muffins):

For the muffins:

  • 2 eggs
  • 1.5 dl sugar
  • 1 dl wheat flour
  • 1 tsp baking powder
  • 3 dl coconut

For the frosting:

  • 50 g cream cheese
  • 25 g room temperature butter
  • 2 dl icing sugar
  • 1 tsp vanilla sugar

For the garnish:
Coconut chips

Here's how you do it:

Start by setting the oven to 200 degrees. Whisk the butter and sugar. Whisk in one egg at a time. Mix in the flour, baking powder and coconut. Divide the batter into small moulds and bake for 10 minutes. Whisk together the cream cheese, butter, icing sugar and vanilla sugar. When the cupcakes are ready and have cooled down, add the frosting and sprinkle with coconut chips.
